
Kitchen equipment maintenance checklist
Daily, weekly and monthly maintenance protocols that double the lifespan of industrial kitchen equipment.
Daily (after each service)
- Plate grill: empty grease channels, wipe surface with detergent
- Countertop stove: remove burners, brush clean, wash drip tray
- Pizza oven: scrape refractory stone (after cool-down, not while hot)
- Deep fryer: filter the oil, clean the cool zone
- Hood: send grease filters to wash
Weekly
- Refrigerator: brush condenser grills, check drain channel
- Ice machine: check water filter, rinse bin with warm water + vinegar
- Vegetable cutter: remove all discs, wash separately, lubricate shaft
- Spiral mixer: inspect bowl interior, professional clean if gluten residue
Monthly
- Convection oven: check fan motor, replace gaskets if needed
- Industrial refrigerator: door seal test (paper test), replace if needed
- Plate grill: thermostat accuracy test (infrared thermometer)
- Deep fryer: drain oil tank, check for oxidation
Yearly (professional service)
For all gas equipment, an annual burner service is mandatory. A maintenance contract option is available for Caccia Pro customers.
Keep records
Log every maintenance date and action in writing. This record is decisive for warranty claims.
