The tray trolley stacks trays on runner profiles with an air gap between them: dough proves, baked goods cool, and no bench space is lost. The 15-tier single column suits tight spaces, the 30-tier double column bulk production. Runner spacing is built to the tray format, so GN pans and bakery trays never get mixed on one trolley.
