Traditional cuisine plus Bosphorus-view restaurants. Range + combined plate is standard for fish-and-meze and traditional breakfast operations along Çengelköy, Kuzguncuk and Salacak.

The distance between kitchen and floor is measured in plates per trip. In its three-tier form the service trolley carries a full table's service in one run; the two-tier stays nimbler in tight rooms. Tiers are folded with raised edges so plates don't slide while moving. Four braked castors lock the trolley in place at the service point.
